For marination:
Chicken -3/4 kg chicken cut into small pieces
3 1/2 tbsp Spl Garam Masala powder
1 tsp freshly groud black pepper
1/4 tsp Turmeric powder
1 tsp Vinegar
3 Finely chopped green chillies
Salt
Ingredients to roast chicken:
2 Cups thinly sliced shallots
1/4 Cup each Ginger and Garlic
3 Green chillies
1 Spring chopped curry leaves+2 springs for garnishing
Oil preferably Coconut oil
Spl Garam Masala Powder
Fennel Seeds 1/4 Cup
Cinnamon(Karuva patta) 10 (1 inch length )
Cloves(Grambu) 8
Cardamom(Elakka) 2
Heat the masala in a pan for 3 min and grind them to coarse powder.
Preparation:
- Cut the chicken into small pieces as shown in the picture.Make a paste out of the marination ingredients and mix with the cut and clean chicken and keep it aside for 30 min for the marination to get into the chicken.
- Heat oil in a large pan(refer notes),Add the thinly sliced shallots and fry then until transparent and add chopped ginger,garlic,curry leaves and green chillies and saute them till soft.
- Add the marinated chicken pieces and cook them without adding water,as the water comes out from the chicken.At any point if you think chicken is getting dry add 2 tbsp of water.Add the remaining curry leaves and when chicken is cooked remove from fire and serve hot.Enjoy!!
If you need the real taste try making Special garam masala powder.I used a nonstick pan and so saved on oil.If the chicken is too hard then its better to half pressure cook first after marination.
