Christmas Fruit Cake


 

 

 

 

 

 

Ingredients

All-purposeflour-1 3/4 cup

Butter-1 1/4 cup

Sugar - 1 1/4 cup

Egg -4 nos

Orange juice -1/2 cup

Lemon juice-1tsp

Baking powder 1 ½ tsp

Orange zest grated -1tsp

Cashews (if needed)- 1/4 cup  

Fruit mix -3/4 cup

Raisin (black) – 1 1/4 cup soaked in 3 tbsp. of brandy for at least 3 days

Caramelized sugar syrup -1/2 cup ( recipe followed)

Vanilla essence-2 tsp

All purpose flour -1/4 cup for dusting

 

Setup:

1.      Keep all cold ingredients outside in order to get to room temperature

2.      Grate the orange zest

3.      Prepare the lime juice and orange juice

4.      Caramelize sugar-In a tick bottom pan add in 1/4cup of sugar at low heat and stir occcassionally.Boil 1/4 cup of water in the microwave and set it aside. Once the sugar get dark brown in color, add in the boiled water. Make sure to stay away when you add boiling water to avoid burns.

5.      Add baking powder to All-purpose flour and swift for 3 times.

6.      Once the batter is ready make sure to dust the raisin and fruit mix with all-purpose flour(may need ¼ cup of all-purpose flour).This step is done to keep the fruits in the batter consistently all over the mix

Preparation:

 1.      Preheat the oven to 350 Fahrenheit.

2.      In a large bowl, add in the butter and sugar and beat well.

3.      Now add eggs to the above mixture, one by one and beat well.

4.      Add all-purpose flour as needed and stir well with a spatula until all the flour is added in to the mixture.

5.      Add vanilla essence, stir

6.      Add caramelized sugar, stir

7.      Add orange juice to acquire desired consistency, stir

8.      Add lemon juice-stir

9.      Add in orange zest  to the batter

10.  Now add the dusted fruit mix and stir

11.  In a baking tray, spread a parchment paper and add the batter to the tray. Bake for 45 minutes on the middle rack.
