1 Cup mashed ripe bananas(About 2 ripe bananas;I used chiquita)
1tsp Baking soda
1/2 Cup low-fat Yogurt
1/4 Cup vegetable/corn/canola oil
3/4 Cup light brown sugar
1 Large Egg or 2 large egg whites
1 tsp pure vanilla extract
1 Cup All purpose flour
1/2 Wheat flour
1/2 tsp ground cinnamon(optional)
1 tsp baking powder
1/8 tsp salt
Preparation:
Preheat the oven to 350 degree F(180 degree Celsius) and place the rack in the center of the oven.Banana bread is made in three separate parts as numbered and mixed together.
- In a bowl mash the ripe banana very well and add baking soda and low fat yogurt.Let it stay like that till you make a mix of other ingredients.
- In another bowl ,beat egg and add oil ,brown sugar and vanilla and mix them to a paste with a spatula and keep it aside.
- Take a bigger bowl,so that every ingredients could be mixed together.In that bowl mix All purpose flour,Wheat flour ,baking powder and salt.
Spread it in a loaf pan and bake it for 45 minutes at 350 degree F.To check if it is done insert a tooth pick or skewer in the middle and if it comes out clean,its done or you may have to keep it for extra couple of minutes.
Note:
I prefer not to use a cake mixer because it may over beat the mixture.I don't add cinnamon but if you like the taste of cinnamon you can add them.The loaf get sweeter as it sits,so you may feel sugar is less on first day but second day its at its best.Enjoy!!
