Mango Pickle/Mango Achar


Ingredients

Mango -3 raw green (Medium to large size)cut into bite size
Garlic -12 cloves chopped finely
Ginger -3 tbsp Chopped finely
Curry Leaves -2 Springs
Sesame Oil/Nallena -1/3 Cup
Red Chilly Powder -6 tbsp
Asafoetida -1/8 tsp
Fenugreek Powder -1 tsp
Vinegar -10 tsp
Salt - to taste

Preparation

  • Heat sesame oil in a pan,add thinly sliced garlic and ginger,saute it until they turn golden brown and keep it aside.
  • Add chopped mango slices and turn off the heat.The mango slices must be on the fire only a few seconds.When the mango is coated in the oil keep it aside.
  • Now add red chilly powder,Asafoetida,fenugreek powder into the pan and turn on the stove to low heat,stir well.(Make sure not to burn the spices)
  • Now add all the ingredients kept aside including vinegar and salt and turn off the heat.Let it cool.
  • When its cool transfer it to an airtight glass container and store it outside or in a refrigerator.
