Chicken Biriyani



For marinade
  • Chicken-1 1/2 wholechicken cut into big pieces
  • Red chilly powder-2 tsp
  • turmeric powder-1/2 tsp
  • yogurt -6tbsp
  • Salt-as needed

Cut the chicken in large pieces,marinate the chicken with above said red chilly powder,turmeric powder,salt and yogurt and keep it aside for an hour.

Note:You can marinate the day before and store it in fridge or in freezer if you are thinking of next week. 

Masala for biriyani:

  • Onion medium sized-4 thinly sliced lengthwise
  • Ginger -2 inch length
  • Garlic-10 pods
  • GreenChilly- 6-10 small chilies
  • Meat Masala -1 tsp
  • Garam masala-1 tsp
  • Coriander Powder-1 tsp
  • Tomato-4 meduim sized
  • cilantro-1 cup chopped leaves
  • Oil-Sunflower oil for frying

Preparation:
  1. Pressure cook the marinated chicken on high heat,make sure chicken should only be half done
  2. pour some oil into a wide pan and shallow fry the chicken pieces
  3. once frying is complete,add onions to it add cook it until soft
  4. Add Chopped Ginger,garlic,green chilly to the above and saute for another 5 mins
  5. Add the spices -Meat masala, coriander powder and garam masala to it and cover the pan and cook for another 10 min on low flame
  6. Now add cubed tomato and chopped cilantrot the mixture and cook for another 5 mins-please add 1/2 cup of water if the masala is not in meduim gravy consistency.
  7. Add in shallow fried chicken pieces,stir in together, to above and close the pan and cook for 10mins,low flame
  8. Add salt if needed
Rice preparation:
  • Basmati rice 5 cups
  • Ghee/butter -1/2 stick
  • Broth from cooked chicken +water(or store bought chicken broth =9 cups
  • Cardamom -5
  • Cinnamon-4 1"pieces
  • Cloves 8-10
  • Lemon-1/2 portion

  1. Wash the basmati rice and drain the water completely
  2. Boil the broth+water together 
  3. Take a thick bottom pan on another burner and add in ghee to it
  4. Now add the spices to the oil
  5. Add rice to this and fry for 3-5 mins
  6. Then add boiling broth+waterto the rice 
  7. Add salt as needed
  8. Squeeze in a lemon to this mixture,close the pan with a lid a cook until done
Now take an oven safe glassware and add in chicken and layer rice on top of it and bake on 350 degrees for 10 mins.
