Simple tasty Egg curry with coconut milk





Ingredients
Egg- 5
Onion-2 Chopped
Ginger-1 small piece
Green chilli-3
Curry leaves-
Tomato-1 chopped
Coconut Oil-3tbsp
Turmeric Powder-1/4tsp
Chilly Powder-1/2tsp
Coriander Powder-1 1/2tsp
Coconut milk -2 1/4cups (normal thickness ) Or 1 cup thick coconut milk
Hot water - As required
Salt-As required

Preparation
  1. Boil egg,De-shell the eggs and keep aside
  2. Heat oil in a pan. Saute big onion ,ginger ,green chilly and curry leaves.
  3. Saute till the onion get translucent.
  4. Add chilly powder ,turmeric powder and coriander powder
  5. Saute for 1 minute or till the raw smell disappears.
  6. Add chopped tomato and salt
  7. Mix well and close the pan and cook for 2 min in low flame.
  8. Open the pan and mash the cooked tomato well .
  9. Cut the eggs vertically into halves.
  10. Add the eggs to the above spice mixture,Close the pan for 2 minutes
  11. Add boiled water (1 1/4cup)
  12. After 5 minutes add thick coconut milk and mix
  13. Switch off the burner.

Serve with Chapati,Appam,pathiri etc
