Ingredients
Egg- 5
Onion-2 Chopped
Ginger-1 small piece
Green chilli-3
Curry leaves-
Tomato-1 chopped
Coconut Oil-3tbsp
Turmeric Powder-1/4tsp
Chilly Powder-1/2tsp
Coriander Powder-1 1/2tsp
Coconut milk -2 1/4cups (normal thickness )
Or
1 cup thick coconut milk
Hot water -
As required
Salt-As required
Preparation
- Boil egg,De-shell the eggs and keep aside
- Heat oil in a pan. Saute big onion ,ginger ,green chilly and curry leaves.
- Saute till the onion get translucent.
- Add chilly powder ,turmeric powder and coriander powder
- Saute for 1 minute or till the raw smell disappears.
- Add chopped tomato and salt
- Mix well and close the pan and cook for 2 min in low flame.
- Open the pan and mash the cooked tomato well .
- Cut the eggs vertically into halves.
- Add the eggs to the above spice mixture,Close the pan for 2 minutes
- Add boiled water (1 1/4cup)
- After 5 minutes add thick coconut milk and mix
- Switch off the burner.
Serve with Chapati,Appam,pathiri etc
