Chicken stew with coconut milk

 

 

Ingredients


Chicken -500 gms/Half a Kg
Potato -2 medium
Carrot - 1 small
Green Chilly - 5 small spicy ones
Garlic -3 pods
Ginger - 1 inch piece
Curry leaves-1 spring
Onion -1/2 
Tomato -1small
Special Garam Masala- 1 tsp
Pepper powder -1/2 tsp
Chilly powder-1/2 tsp
Turmeric powder -1/4 tsp
Coriander powder - 2tsp
Coconut Milk -2 cups
Coconut oil -4 tsp

Special Garam Masala 
Cardamom-6
Cloves -15
Cinnamon - 3(1 inch length )
Fennel - 1 tsp

Powder the above and keep it aside

Preparation

  • Marinate 500 gms  of chicken with 1/2 tsp pepper powder,3 green chilly,2 pods garlic and 1/2 ginger portion and keep it aside for 30 minutes.
  • Heat oil in a wide thick bottom pan
  • Saute Onion,Ginger,1 garlic pod and 2 green chilies until onions are soft.
  • Add chilly powder,coriander powder,turmeric powder and coriander powder,saute until raw smell of the spices fade.
  •  Add tomato and saute until the tomato is nice and soft
  • Add the mainated chicken,Diced potato and carrots mix well
  • Add some 1-2 cups hot water or chicken broth and let it cook on simmer for 15-20 minutes until the chicken potatoes and carrots are cooked
  • Now add 1 tsp of special garam masala and a spring of curry leaves,mix well
  • Add 1-2 cups coconut milk(made out of coconut powder) and let it slow cook for 5 minutes.

Note:
  • If using fresh coconut milk you wll have to turn off the heat after the coconut milk is added.
  • I didnt pressure cook chicken as the amount of time to cook the chicken is low here.If the chicken takes longer to cook,you can cook them in the pressure cooker.Sme applies to the carrots and potatoes
