Special Pork Roast

 
Ingredients

Pork -1.5 kg
Turmeric-3/4 tsp
Salt- as required

Onion -4 medium
Ginger - 2 inch piece
Garlic -14 big cloves
Green chilly -4 slit lengthwise
Curry leaves
Red chilly powder -2 tsp
Coriander powder-4tsp
Fennel -1 tsp
Garam Masala -11/4 tsp
pepper powder - 1tsp
Lime juice 1 tsp

Pork Used
I used blade roast cut around 1 kg
Pork belly -The pieces with high fat content .5 kg

Preparation
You can use an instant pot or a pressure cooker for cooking the meat.
  1. Cut the pork without much fat into cubes and set aside
  2. For the pork pieces with fat,add as big slice as possible that can fit in the cooking vessel.
  3. Pressure cook the meat as desired,for me its a whistle on medium heat in a pressure cooker or 4 minutes in instant pot on manual sealing mode.
  4. On medium heat,heat a wide thick bottom pan
  5. Add oil(you can use any oil or fat produced from cooking pork)
  6. Once the oil is heated up,Add onion,ginger,garlic and green chilly and saute for 10 minutes until the onion turns translucent.
  7. Add the spices,Red chilly powder -2 tsp,Coriander powder-4tsp,Fennel -1 tsp and saute until the raw smell disappear.
  8. Add cooked pork,make sure to slice the pork fat into cubes before adding to spice mix.
  9. Let the water in the meat evaporate
  10. Once the roast has come to your desired consistency,add curry leaves,garam masala-11/4 tsp and pepper powder-1 tsp.Mix until well combined and cook for another 2 minutes.
  11. Turn off the heat and sprinkle lime juice
The Pork roast is ready to be served!
