Pachari/long grain white rice - 3 cups -450gms
Poha/flaked rice -3/4 cup -45gms
Grated coconut - 3/4 cup
Yeast - 1 tsp
Salt - 1 tsp
Sugar - 4 tbsp
Preparation
- Wash and soak long grain white rice for 8-10 hours
- In a bender/mixer add the poha/flaked rice with grated coconut and 1 cup of water.Let it soak for 15 minutes.
- Blend the above mixture into fine paste and move to a container.
- Now add the log grain rice and enough water(should have a batter consistency,so keep an eye on amount of water added),blend it to fine paste.When testing the batter,it should be smooth instead of crumbly texture.
- Add yeast,salt and sugar to the batter and mix well.
- Now in a big container(should have enough space to poof) mix the rice batter as well as the rice flake/coconut batter.Mix well and keep it outside until the yeast activates and batter gets to double the size.
- You can store the batter in the fridge and make appam anytime
- To make Appam,Heat appam pan.Heat should be on medium to high.Add in a spoon full of batter and turn the pan around to get the batter all around the pan.Close and cook until done.
