Vanilla Pound Cake with vanilla glaze

Ingredients

Pound cake

Butter -1/2 cup(113 grams) softened
Sugar -1 cup (200 grams)
Vanilla extract -1 tsp
Eggs -3 large at room temperature
All purpose flour -1 1/2 cup(195 grams)
Baking powder -2 tsp
Salt- 1/2 tsp
Sour cream -1/2 cup(125 grams)

Frosting:

Icing sugar -1 cup(120 grams)
Whipping cream -2 tbsp
Vanilla essence -1 tsp

Preparation

Pound Cake

  1. Sift flour,baking powder and salt into a bowl and set it aside
  2. Add butter and sugar into another bowl.Using a hand mixer ,whisk them until fluffy and pale in colour
  3. Add vanilla extract and 1 egg.Beat for one minute.Add the rest of the eggs one by one with beating 1 minute in between.
  4. Add half of the flour mixture and mix until combined on low speed.Add in sour cream,continue mixing until combined.Finally add in the rest of the flour mixture and combine well.
  5. Pour batter into loaf pan that has been lined with parchment paper.Spread evenly.
  6. Bake in a pre-heated oven 350 degree C for 45 minutes or until skewer inserted comes out clean.

The Vanilla Glaze

  1. Once cooled ,remove the parchment paper and place the cake on a rack
  2. Add icing sugar ,vanilla extract and whipping cream into a bowl.Using a spatula mix well into a thick mixture
  3. Pour vanilla glaze on the cake,spread evenly
Note:
You can substitute sour cream with Greek yogourt
