Ingredients
Pound cake
Butter -1/2 cup(113 grams) softened
Sugar -1 cup (200 grams)
Vanilla extract -1 tsp
Eggs -3 large at room temperature
All purpose flour -1 1/2 cup(195 grams)
Baking powder -2 tsp
Salt- 1/2 tsp
Sour cream -1/2 cup(125 grams)
Frosting:
Icing sugar -1 cup(120 grams)
Whipping cream -2 tbsp
Vanilla essence -1 tsp
Preparation
Pound Cake
- Sift flour,baking powder and salt into a bowl and set it aside
- Add butter and sugar into another bowl.Using a hand mixer ,whisk them until fluffy and pale in colour
- Add vanilla extract and 1 egg.Beat for one minute.Add the rest of the eggs one by one with beating 1 minute in between.
- Add half of the flour mixture and mix until combined on low speed.Add in sour cream,continue mixing until combined.Finally add in the rest of the flour mixture and combine well.
- Pour batter into loaf pan that has been lined with parchment paper.Spread evenly.
- Bake in a pre-heated oven 350 degree C for 45 minutes or until skewer inserted comes out clean.
The Vanilla Glaze
- Once cooled ,remove the parchment paper and place the cake on a rack
- Add icing sugar ,vanilla extract and whipping cream into a bowl.Using a spatula mix well into a thick mixture
- Pour vanilla glaze on the cake,spread evenly
Note:
You can substitute sour cream with Greek yogourt
