Mango Salad

 Ingredients

  1. Romaine/Iceberg lettuce-    6 cups , rinsed, chopped and spun dry
  2. Tomatoes - 1 Roma Diced
  3. English cucumber-   1/2 diced
  4. Mango- 1 peeled and diced
  5. Avocado-  1 pitted, peeled and diced
  6. Red onion- 1/2 small diced
  7. Cilantro - 1/4 cup c chopped
  8. Almonds -1/2 cup sliced toasted, for topping


Honey Vinaigrette Dressing:

  1. Extra virgin olive oil  - 1/4 cup
  2. Apple cider vinegar - 1.5 Tbsp
  3. Dijon mustard - 1 tsp   
  4. Honey - 1tsp  
  5. Garlic clove, 1 tsp minced
  6. Sea salt  - .5 tsp
  7. Black pepper -1/8 tsp or to taste

Instructions

In a large salad bowl, add chopped lettuce. Top with diced tomatoes, diced cucumber, diced mango and avocado, thinly sliced red onion, 1/4 cup cilantro

How to Make Honey Vinaigrette Dressing:

Combine the Honey Vinaigrette Dressing Ingredients in a mason jar, cover tightly with lid and shake together until well combined. You can also mix it up in a bowl and whisk thoroughly. If not using dressing right away, shake well just before serving. Drizzle the salad dressing over the salad, adding it to taste
