Ingredients
- Romaine/Iceberg lettuce- 6 cups , rinsed, chopped and spun dry
- Tomatoes - 1 Roma Diced
- English cucumber- 1/2 diced
- Mango- 1 peeled and diced
- Avocado- 1 pitted, peeled and diced
- Red onion- 1/2 small diced
- Cilantro - 1/4 cup c chopped
- Almonds -1/2 cup sliced toasted, for topping
Honey Vinaigrette Dressing:
- Extra virgin olive oil - 1/4 cup
- Apple cider vinegar - 1.5 Tbsp
- Dijon mustard - 1 tsp
- Honey - 1tsp
- Garlic clove, 1 tsp minced
- Sea salt - .5 tsp
- Black pepper -1/8 tsp or to taste
Instructions
In a large salad bowl, add chopped lettuce. Top with diced tomatoes, diced cucumber, diced mango and avocado, thinly sliced red onion, 1/4 cup cilantro
How to Make Honey Vinaigrette Dressing:
Combine the Honey Vinaigrette Dressing Ingredients in a mason jar, cover tightly with lid and shake together until well combined. You can also mix it up in a bowl and whisk thoroughly. If not using dressing right away, shake well just before serving. Drizzle the salad dressing over the salad, adding it to taste
