Paalada Payasam is a traditional South Indian dessert made during special occasions, particularly in Kerala. It is a creamy rice pudding made with rice ada (flattened rice flakes), milk, sugar, and ghee. First, the rice ada is cooked until soft, then simmered in boiling milk to develop a rich, creamy consistency. Sugar is added to sweeten the dish, and cardamom for a fragrant flavor. The mixture is slow-cooked until it thickens, resulting in a deliciously smooth payasam.
Ingredients
ada- 100grams
Milk -1.5liters full fat
Sugar- 1/2 cup +1/4 cup
Water -1/2 cup
Ghee - 1tsp
Cardamom powder - out of 4 pods
Instructions
- In a big pressure cooker bring 1.5l milk to boil along with 1/2 cup of water.
- Once the boiled put the heat to simmer,or to the lowest setting,close and cook for 45 minutes.Make sure pressure is built up.
- turn off the heat and let the pressure release by itself.
- For the ada,wash it in a strainer.
- Now in a container add ada and add boiling water.Cover and let it sit for 20 minutes.
- when you squish the ada after 20 minutes it should be mushy..Drain excess water in strainer and keep it aside
- Now heat up a wide pan,add ghee and add the strained ada to it,fry for 5 minutes.
- Add the cooked milk and stir continuously for 30minutes or until the milk is reduced to 1l or until thick.
- Turn off the heat and add powdered cardamom.
- Now the dessert is ready to be served!
